Description

Method of cooking eggs

1> It is better to use 2~3 days(in summer)/3~4 days(in winter) fresh quail eggs.

2> Boil the water, pour the quail eggs into the boiled water, keep big fire and stir for about 3~5 mins (keep in mind this is the most important step), after then turn into small fire for about 5 mins.

3> Take out the quail eggs and dip them into cold water immediately.

4> Put the quail eggs into seal container and crack the shell by shaking them.

5> Dip the shell-cracked eggs into cold water for 5~10 mins, keep the quail eggs dipped in water, so it will take some water when you put eggs on machine,

The Difference between Machine Shelling and Hand Shelling

Works great! The suction is good unless you put all of the eggs in a bowl and then try to take the yolks out. It's like the egg white is too thick in a bowl and it covers up the yolks. what if you crack them either one at a time and take the yoke out or crack them straight into your skillet, this thing works great!
The suction is not easy to control. On medium or large eggs there are problems as the yolk leaves a gap around the opening and white can be sucked up too.
If you want to keep the white and toss the yolks, then it is ok, but you will likely suck some or even most of the white that you want in with the yolks.
If, on the other hand, you want to use the yolks only, they will be contaminated with some white, and since there is a 50% chance that the yolk will break, especially if there is white in the bulb too, you end up having to make do or start over.
I bake a lot of German chocolate cheesecakes which means I have to do a lot of eggs separating. I am very particular about making sure that I don't get whites in with my Nagy oaks and this does the trick I just squeeze it over the egg after I crack it and hold it for a second to make sure all of the white is separated and I have a very clean separated batch of egg yolks for my custard. Cool invention.
I really like using this and does the job of getting just the yolk. The first time was hard and I broke the yolk a couple of times, but practice makes perfect
